Cucumber Sushi Rolls with Marinated Vegetables, Sesame-Ginger Vinaigrette, and Avocado-Wasabi Puree

Cucumber Rolls:
- 2 large english cucumbers
- 2 large carrot, julienned
- 4 oz. fried tofu
- 1/2 avocado, cut into large julienne
- 1 fuji, gala, or other firm, sweet apple, julliened
- 2 tablespoons rice wine vinegar
Sesame Vinaigrette
- 1 tablespoon dijon mustard or spicy chinese mustard
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 2 tablespoons rice wine vinegar
- 2 tablespoons peanut oil
- 1 teaspoon black sesame seeds
- salt to taste
Avocado-Wasabi Puree
- 1 ripe avocado
- 1/2 cup filtered water
- 1-2 teaspoons wasabi powder
- 2 tablespoons rice wine vinegar
- Juice of 1 lemon
To make the sesame-ginger vinaigrette, combine the mustard, sesame oil, sesame seeds, ginger, and vinegar. Slowly whisk in the peanut oil. Chill and set aside. Blend all the listed components of the avocado puree in a blender for 1 minute. Marinate the carrots and apples in the vinegar and cut the tofu into large julienne. Cut the ends off of the cucumber and cut into to pieces, each should be about 6 inches long. Slice the cucumber lengthwise into paper thin slices on a mandolin. To assemble the rolls, place 4 cucumber slices on a piece of plastic wrap (I used a sushi rolling mat with plastic wrap draped over), overlapping slightly. The moisture in the cucumber will keep the roll from falling apart. Place a small amount of the carrots, apple, tofu, and avocado along the cucumber slices (placing them across the slices). Carefully roll the filling in the cucumber. Wrap tightly in the plastic wrap. While still in the plastic, slice diagonally. This will keep the rolls from unravelling. Unwrap and serve with the two sauces. Garnish with black sesame seeds. This recipe serves 4 as an appetizer.
The cucumber rolls held together much better than I thought they would. Cara and I were able to eat them entirely with our hands without getting too messy. The avocado puree was very creamy and the sesame vinaigrette provided some bold flavor. Obviously this is a dish rich in texture. This, like the beet ravioli is an interesting and fun way of eating what is essentially a salad
