Seared Lamb Chops
From a few years of restaurant experience and a lifetime of stuffing my face I have come to the conclusion that you’re either a lamb person or a pig person. Those who grew up eating pig find the smell and taste of lamb to be un-appetizing. Those who grew up eating lamb find the smell and taste of pork to be a bit funky. Some of my favorite foods include pork, bacon, ham, and pork rinds. I find that lamb (especially when overcooked) smells and tastes weird. Nevertheless, a well cooked lamb chop is moist, succulent, and delicious. And, as a chef at school always tells us, “if you cook for yourself, you’ll go out of business.” So here’s my spring lamb dish:
In this dish I paired spring flavors of mint, orange, fennel, and garlic with lamb chops. The chops are cooked sous vide to exactly 145° F then quickly seared to create a deep brown, caramelized crust. I made a rich white bean and roasted garlic puree that I paired with stewed carrots, calamata olives, and garlic chips. A yogurt mint sauce cuts through the richness of the lamb and beans and provides a burst of bright flavor. Finally, the lamb is served with a shaved fennel, blood orange, and almond salad.

What is sous vide?
My vote falls squarely in the “Pork” column, but I still ate four of these delicious little things - the whole meal was awesome.
I am a freak of nature. I would kill or die for both.
Yeah, I can’t say I would turn down either pork or lamb, but I did want to say this:

I never really thought of the whole lamb v. pork thing but I must agree 100%. I grew up in a lamb household. Love it.
I will eat some pork products especially the Italian meat varieties…soppresata, prosciutto, pancetta. They’re all so wonderful to cook with. Wouldn’t you know it, now I work at a Jewish country club and we do not use pork of any kind. So lamb it is and turkey bacon, turkey ham and any other porky sub I can find in the industry.

I remember one day when I first started working at TPCC the waitstaff brought back a big tray of ham. I was staring at it with loving eyes and you said “you’re a pig person aren’t you?” I started chowing down with both hands.
Oh but no. I love and I do mean LOVE, both pig and lamb, goat, deer, rabbit, duck….give it to me!
How long using sous vide does the rack take?
As a strict meatatarian, I love both lamb and pork—to the extent that either will catch my eye on a menu, even in a steak place. Gorgeous photo, by the way.

Jacquie: Sous vide is a cooking method where the food (usually a protein) is vacuum-sealed, then placed in a water bath at a very precisely controlled temperature, and cooked until the food matches the temperature of the water. It’s the ultimate poaching method, and somewhat difficult to mimic at home safely (because the botulism bacteria loves the airless environment) without a thermostat-regulated water bath.
