Cooking Sous Vide
I made pork tenderloin last night, which I will post about soon, using an interesting cooking technique called sous vide. Sous vide means under pressure in French. In high end kitchens it involves using a set up as shown above. A bath of water is heated using an expensive piece of equipment called an immersion circulator. The circulator holds the temperature of the water very accurately. Meats, vegetables, or other foods are then vacuum sealed with seasonings and flavorings in plastic bags and cooked at a specific degree for (usually) a long amount of time. The genius of this technique is very simple. First, vacuum sealing opens the pores of foods, allowing very quick marinating and more intense flavoring. Second, since there is no air or water around the food, the moisture will not escape. This makes the product juicier at more well-done stages and prevents any shrinkage (saving money in a restaurant situation). Third, using a piece of equipment like an emersion circulator, which holds a bath of water at a very specific degree, you can essentially “set it and forget it” since no matter how long you cook an item sous vide, it will not cook beyond the temperature ceiling. Finally, sous vide food is an even doneness throughout, which results in the best tasting meats you’ll ever eat. Here’s an easy way to cook sous vide at home:
Ingredients/Equipment needed:
- A large stock pot
- Digital probe thermometer
- Meats, vegetables, or other foods, lets say beef tenderloin in this case, along with seasonings and flavorings
- Heavy duty plastic zip top bags
- A sautee pan
- 1 Tb. clarified butter
In this example lets cook a medium rare steak, about 135 degrees. Begin by filling the stock pot almost to the brim with water. Insert the probe thermometer and tie the probe around the handle. Place the steaks and any seasonings or flavoring in the zip top bags. Squeeze as much air from the bags as you can and place in the water. Once the water, with the steaks in, reaches 135 degrees, cover the pot and turn off the heat. Monitor the temperature of the water, heating slightly as it cools down. A large pot of water holds its temperature very well so, depending on the size of your stock pot, you may only need to do this a few times over the course of three hours or so. After about 3 hours, remove the bags from the water and the steaks from the bags. Season the steaks and sear in clarified butter for 1 minute on each side or until golden brown. Cut into the steak and notice how it’s evenly medium rare throughout. Eat the steak and you’ll immediately understand why you spent the time and effort.
