Golden Beet “Ravioli” with Blood Oranges, Carrot Reduction, and Basil Oil
I made this dish because I wanted to make something fancy, unique, and healthy. The dish is vegetarian and the idea of using beets as ravioli was inspired by a recipe I saw in one of Charlie Trotter’s cookbooks that used radishes. Here’s how you make enough for 5:
Ingredients:
- 3 large golden beats
- 3 oz Chevre goat cheese
- 2 cups carrot juice
- 3 blood oranges
- 1 cup fresh spinach
- 1 cup fresh basil
- 1 cup canola oil or other vegetable oil with a light taste
- salt and freshly ground pepper to taste
Begin by scrubbing the beats, tossing them in oil, seasoning them, wrapping them in aluminum foil and roasting in a 350 degree oven for an hour or until tender. Refrigerate for use later.
Quickly wilt the spinach and basil for, drain, and shock in ice water or very cold running water. This sets the bright green color. Squeeze the spinach and basil dry and add to a blender with salt, pepper, and the vegetable oil. Blend on high for 1 minute and place in a container. Refrigerate overnight. The next day, strain the oil through a strainer lined with cheesecloth. This seems like a lot to go to but this oil is a great thing to have around. You can use it as a garnish, sauce for pasta, dipping oil for bread, or whatever suits you.
Place the carrot juice in a small saucepan and reduce over medium heat until it is 1/4 it’s original volume and syrupy. Cool.
Supreme the blood oranges and set aside for plating.
Peel the skin from the cooled beets and slice thinly using a knife or mandolin. I cut mine with a knife about 1/16′’ thick. Take a pinch of goat cheese and form it into a penny sized round using your fingers. Place in the center of one of the beet slices and place another slice on top, pressing the edges together. Arrange on the plate with the blood orange segments, then drizzle with the carrot reduction and basil oil.
