Spicy Salted Caramel Chocolates
This is a result of my recent foolings around with candy making. Last week I impulsed purchased some candy molds at a cutlery shop in Chicago. I tempered some dark chocolate using Mycryo, a freeze dried cocoa butter powder that makes tempering chocolate very, very easy. I filled the molds with chocolate then poured the chocolate out, leaving a thin layer clinging to the plastic mold. Once the chocolate set I filled the molds with some leftover caramel sauce from my bananas foster recipe. I then covered with more chocolate to seal in the gooey caramel. After I unmolded the chocolates I sprinkled the top with a mixture of Australian pink salt and cayenne pepper. For my first foray into chocolate making, I’m very pleased. Photos by Justin Kern.

Forgive my ignorance, but how does additional cocoa butter aid tempering? I’m terrible at tempering chocolate, so I could use all the help I can get!

The Australian pink salt is called Murray River Salt and is very delicate without a heavy salty taste. Unbeatable!
